Virgin Pina-Colada Popsicle

1/2 pineapple (large, chopped, about 4 cups)

400 ml. cream of coconut

3 Tbsps. fresh lime juice

1 pinch fine salt

Sweetener to taste  (Sugar or Agave or Maple syrup)

Puree the pineapple, cream of coconut, lime juice, and salt in a blender until smooth.

Pour the mixture into 12 ice-pop molds, dividing evenly. Insert ice-pop sticks and freeze until firm, at least 4 hours. It stays good to eat for up to 4 days.
