I love curry! But I don’t like it too mild or too hot! This curry is amazing, so many textures and flavours.
If you are vegetarian, you can make it exactly the same, just leave out the chicken.
1 tablespoon of curry powder seems a lot but actually turns out relatively mild.
2 Organic Chicken Fillets, chopped into small pieces
1 Medium Sweet Potato, peeled & cubed
1 tbsp Curry Powder
1 tin full fat Coconut Milk
2 tbsp Coconut Oil
1 tbsp Tomato Puree
1/2 Red Chilli
Thumb sized piece Fresh Ginger, grated
3 Cloves Garlic, minced
1 Large Red Onion
1 Medium head Cauliflower, split into florets
1 cup Mixed Peppers, chopped
Large handful Spinach
1/4 teasp salt
1/3 teasp pepper
Fry onion, garlic, 1/2 red chilli and ginger in a little coconut oil until softened
Add curry powder and fry for 2 minutes
